Ingredients

Scale

Vegetables

  • 1 fresh jalapeno, seeded and finely minced
  • 1 cup fresh spinach, chopped
  • 1 small tomato (such as Roma), seeded and diced (1/2 to 3/4 cup)

Dairy & Cheese

  • 3 tablespoons butter
  • 1 cup 2% milk (can substitute whole milk)
  • 2 ounces cream cheese, softened to room temperature
  • 2 cups pepper jack cheese, freshly shredded

Pantry

  • 2 tablespoons all-purpose flour
  • 4 ounce can green chiles
  • Salt to taste

Instructions

  1. Heat Butter and Cook Vegetables: Melt the butter in a deep skillet or saucepan over medium heat. Add the finely minced jalapeno and chopped spinach. Lightly season with salt and cook for about 2 minutes, or until the spinach has wilted.
  2. Add Flour and Cook: Lower the heat to low. Sprinkle the all-purpose flour over the vegetable mixture and toss to coat well. Continue cooking for 1 minute, stirring frequently to avoid lumps.
  3. Whisk in Milk: Slowly whisk in the milk, stirring continuously until the sauce becomes smooth and thickened.
  4. Add Cream Cheese and Green Chiles: Remove the pan from heat, then stir in the softened cream cheese and canned green chiles until everything is well blended and smooth.
  5. Incorporate Pepper Jack Cheese and Tomatoes: Add the shredded pepper jack cheese to the mixture, stirring until the cheese melts and the sauce is silky. Finally, fold in the seeded, diced tomatoes and adjust salt to taste.
  6. Serve: Serve the white spinach queso warm immediately with tortilla chips for dipping.

Notes

  • For best texture and melt, grate your own pepper jack cheese instead of using pre-shredded varieties that contain additives.
  • To add extra heat, sprinkle in ground cayenne pepper to your preferred level of spiciness.
